I’ve generally considered stuffed capsicums a bit fussy to make. I’m more of a home cooked meal gal than a masterchef! However, making these slow cooked capsicums have changed my mind! They were definitely a throw it all together, pop it in the slow cooker and then magic happens! Try it, I think you might like them
Ingredients
- 4 Capsicums
- 450 g turkey mince
- 1/4 tspn cayenne (or to taste)
- 1/2 tspn cumin
- 1/2 tspn dried basil
- 1 egg
- 2 garlic cloves, minced
- 1 onion, diced
- 1 cup baby spinach, chopped
- 1 tablespoon extra virgin olive oil
- 2 tablespoons coconut flour
- 2 cups salsa (substitute with passata)
- salt and pepper
Instructions
Step 1
Slice the tops off the capsicums and cut out the seeds. Set aside.
Step 2
In a large mixing bowl, combine the turkey mince, sea salt, black pepper, cayenne, cumin, dried basil, egg, minced garlic, onion, spinach, olive oil and coconut flour. Mix well and stuff it into the capsicums.
Step 3
Place the capsicums in the slow cooker and top each with a spoonful or two of salsa. Cook for 4 hours on high or 6 – 8 on low.
Step 4
Remove the capsicums from the slow cooker. Serve with cauliflower rice or quinoa. Top with remaining salsa and Enjoy!
